the next in our dinner soirée series

Following the launch of our inaugural dinner series in Biarritz last summer, we’re honored to return to the French Basque Coast for a second gathering—this time with acclaimed chef and master forager Joss Ueng.

On the evening of September 14th, we’ll host an intimate, 8-course dinner at our Côte Sauvage retreat house, limited to just 20 guests. With a culinary background spanning Noma, Saison, and Ilis, Adam brings a deeply elemental approach to cooking—rooted in wild ingredients, fermentation, and sensory storytelling.

Set against the rugged coastline and countryside of Biarritz, this evening invites our global community of creatives and collaborators to reconnect through flavor, terroir and the rhythm of the land.

Tickets are 160€ per person, including beverage pairings.

Guests will gather as the sun begins to set, welcomed with wild apéritifs and the scent of fire catching on foraged herbs. The menu, shaped by what nature offers that day, reflects the untamed character of the coast—salt-brushed greens, flowering aromatics, and resilient roots that thrive without intervention.

Guided by Adam’s ethos of cooking with presence and place, the 8-course experience becomes more than a meal—it becomes a memory, crafted in community and tied to land and season.

The landscape becomes the menu. The environment writes the recipe.
